BLT with Jalapeno Mayo

We kept dinner really simple at our house tonight... it's too hot to stay in the kitchen too long! :)

We just made regular BLT sandwiches but we "kicked them up a notch" (Emeril's words and Emeril's recipe! :)) with a little Jalapeno Mayo!

Here's the recipe:

Jalapeno Mayonnaise

Stir together the following ingredients and chill until ready to serve:

1/2 cup plus 2 T. Mayo
1 or 2 jalapeno peppers- seeded and finely chopped
1 t. lime juice
1/2 t. minced garlic
1/4 t. salt
1/8 t. dried crushed oregano


Served with a side of fruit, it was the perfect light summer meal!

Bacon Pasta

Sounds great already, doesn't it?
Bacon always does that for a recipe! :)

I think this is the recipe that got Evan to marry me...
my version of "Engagement Chicken" I guess!! :)

Bacon Pasta

Ingredients:
16 oz. penne pasta
1 cup heavy whipping cream
1 1/2 cups shredded parmesan cheese
1 lb. cooked and crumbled bacon
1/2 cup chopped green onions
salt and pepper to taste

Directions:
Cook and drain pasta. Combine whipping cream and shredded cheese with hot pasta stirring until cheese is melted to make a sauce. Toss pasta with bacon and green onions. Add salt and pepper to taste. Serve immediately.

We had ours with a Greek salad (I realize that mixing Greek and Italian is a little weird but it sounded good to us so we went for it! haha).


I made this a few nights ago... but tonight we're probably going to go out for Mexican food in honor of Cinco De Mayo. I don't know why but I feel compelled to eat Mexican food on this day... Like I'm doing something wrong if I don't. haha Maybe it's because I had a Spanish class in 1st-11th grades and I took two years of Spanish in college? (Just for the record... I wouldn't be able to speak Spanish if I were lost in Mexico and my life depended on it.)

Quiche

How do you make a quiche?

5 eggs and 1 cup of milk

It really is that simple... almost. To make a quiche, all you have to do is whisk together 5 eggs and one cup of milk. Then fill an (uncooked) refrigerated pie crust with your ingredients of choice (usually a meat, a veggie and cheese- layered in that order) and pour the egg/milk mixture over the top. Then pop it in the oven for 35-45 minutes (until the eggs are set) at 375 degrees.

Last night, I used chicken as my meat; sliced black olives, chopped green onions, and a few chopped tomatoes as my veggies; and shredded habanero cheddar cheese.

A few other great combinations are:

1. sausage, mushrooms and cheddar
2. bacon, spinach and swiss
