One Year Ago Today...




Evan and I met our precious son for the very first time!!!

And even though we had NO IDEA (in our wildest of wild dreams) that he would become our son... we happened to take pictures with him.

What a precious gift from GOD to have these priceless pictures with our baby boy when he was only four months old. We will treasure them forever.

GOD was probably smiling (laughing) big time when we snapped these pictures! :)

Cinco De Mayo and Mother's Day

I added Cinco De Mayo into the title of this post because I have a delicious Chicken and Black Bean Enchilada recipe that we had last week on Cinco De Mayo that I want to add in at the end of this post, but mostly I want to talk about our Mother's Day weekend... and my first Mother's Day! :)

Mother's Day didn't exactly go like we had planned... but it was still great... just different great! On Friday afternoon, Evan's Papaw fell and broke his hip so we ended up spending the weekend in Tennessee at the hospital with him. (He has since had a successful surgery and is doing well in recovery!) It turned out to be a good weekend because Seth got to meet his Papaw for the first time and lots of other out of town family members that he hadn't met yet! :)

We celebrated Mother's Day with Evan's mom on Sunday morning in the hospital room and then with my Mom and Grandma on Sunday night when we got home!

Evan, Seth (and Jack) gave me some super sweet cards and a certificate for a massage and Evan made a tear-jerker video/slide-show for me that I will treasure FOREVER!! I so wish I could put it on here but it shows little bit's face too many times! :(

All in all, it was a great weekend and I was beyond grateful to have my sweet baby to rock to sleep on my first Mother's Day! SO special! :)

Now back to Cinco De Mayo... this is my favorite homemade Chicken Enchilada recipe... my mom got it from one of our neighbors when I was like 7 years old and we've been making it ever since! That must mean it's good! :)

Chicken and Black Bean Enchiladas

Ingredients:

3/4 lb. boneless chicken breast
2 cloves garlic, minced
1 can black beans, undrained
1/2 cup sliced green onions
2 cups shredded Monterey Jack cheese
3 slices of bacon (I use way more :))
1.5 cups salsa (I use a whole jar)
1 t. ground cumin
1/4 t. salt
12 flour tortillas

Directions:
Cut chicken into short thin strips. Cook bacon until crisp. Remove to paper towel, crumble. Cook chicken and garlic in bacon drippings until chicken is no longer pink. Stir in 1/2 cup salsa, beans, cumin and salt. Simmer until thickened, 7-8 minutes. Stirring occasionally. Stir in green onions and bacon. Spoon heaping 1/4 cup of mixture down the center of each tortilla, top with one T. of cheese. Roll up; place seam side down in lightly greased 9x13 baking dish. Spoon remaining salsa evenly over enchiladas. Bake at 350 for 15 minutes. Top with remaining cheese and return to the oven for 3-5 minutes.
